Legumes (legumes, lentils et haricots) are an important part of a healthy diet as they provide a significant amount of fiber, protein, iron, zinc, B vitamins and minerals. They are high in soluble fiber and low on the glycemic index which makes them a good food to control appetite by increasing the feeling of satiety and reduces hunger, cravings and fatigue. They are a good choice for people with celiac disease because they can replace grains containing gluten in the diet.
Sprouting is one of the most effective strategies to improve the nutritional quality of legumes (Gulewicz et al. 2000). It enhances the digestibility of proteins, increases their bioavailability and allows the utilization of peptides and amino acids in the form of new proteins. The phytic acid content is also reduced and the presence of anti-nutritional factors such as trypsin inhibitors and lectins is significantly reduced by sprouting (Oboh et al. 2000).
