Chicken puff is an easy snack or appetizer made with a delicious chicken filling baked in a flaky pastry shell. It’s a great finger food for family get-togethers, parties or impromptu gatherings with friends! These little pies can be easily made ahead of time and frozen for later.
The ingredients for this recipe are very simple and readily available at almost any grocery store. You’ll need a pack of puff pastry sheets (found in the same aisle as phyllo dough) and some butter. Butter is used for making a roux, which is the white sauce that the chicken will be simmered in. You’ll also need some chicken, shredded cheddar cheese, salt, cumin powder, chili powder, paprika and water or tomato paste for the filling.
Preheat the oven to 375oF. Start by thawing the puff pastry sheets.
While the dough is thawing, prepare the chicken mixture. Mix the chicken, cheese and other ingredients in a medium bowl.
Once the roux is cooked, add in the chicken and stir well to combine. Let the chicken mixture cool completely (Picture 2).
Once the chicken filling has cooled, it’s time to assemble the puffs. Roll out a puff pastry sheet and cut into 9 circles for the bottom of each. Fill each circle with about a tablespoon of the chicken mixture. Fold the other side over the filling and crimp it down with your fingers or with a pastry crimper (I highly recommend using one, they make life so much easier).
